Salmon and Kale Stir-Fry
RecipeSalmon and Kale Stir-Fry

This salmon and kale stir-fry is som easy to make for busy weeknight meal. Just in a matter of a few minutes you can enjoy this delicious dish on your plate. The recipe uses the combination of simple ingredients, but it’s the sweet and salty sauce that brings it to the top! It literally takes a couple of minutes to make it, and the secret is in the combination of ordinary ingredients - reduced sodium soy sauce, honey, garlic and some fresh ginger. It’s a great way to use the vegetables you have available in your fridge. Of course, you can experiment and substitute any of the ingredients with something you already have. Don’t have salmon? Not a problem, you could easily use chicken, mushrooms, shrimp or tofu. Note, that sauteing the kale leaves should not exceed 2-3 minutes, otherwise they may turn soggy. Pumpkin Ginger Soup With Leek, Celery and Bell Pepper
RecipePumpkin Ginger Soup With Leek, Celery and Bell Pepper

Pumpkin ginger soup is a pretty simple and healthy recipe. Unlike the standard recipe, this one is packed with even more nutrients from vegetables, such as pumpkin, leek, celery and bell pepper. It’s a great way of ensuring your loved ones are eating enough vegetables, especially if they are not big fans of a vegetable pile on their plate. When blended into a soup the vegetables nicely combine their flavors and the creamy texture makes it far more palatable. Just remember that you can spice the soup up as much as you like, and you can experiment with your favorite spices. This recipe is completely vegan-friendly, just make sure to use vegetable stock instead of chicken stock and the soup will taste equally tasty! We used no cream in this recipe because the beautiful combination of the vegetables makes the soup rich in flavor and creates a nice creamy texture on it’s own, making it unnecessary to use the cream. This pumpkin ginger soup is not only healthy and nourishing, but also quick and easy to make. It is not only ideal for keeping you warm on a cold winter night, but it can also be served on cool evenings throughout the year. The best part about making pumpkin ginger soup is that you can prepare it in advance, which definitely makes life much easier. This soup can be stored in the fridge for up to 5 days, and can also be frozen for about 1 month.

Black Bean Meatballs with Mushrooms
RecipeBlack Bean Meatballs with Mushrooms

These black bean meatballs with mushrooms are one of the simplest variations of meatless vegetarian meatballs, and they are packed with plant-based protein and nutrients. Four vegetables (black beans, mushrooms, carrots, and onion) serve as the basis of these meatballs. Beans and mushrooms work really great together, they make a meat-like texture and are very healthy and filling . Oats and egg bind the mixture together, so it becomes possible for the meatless balls to be firm enough and not fall apart while cooking. This recipe makes approximately 20 meatballs. Cooked black bean meatballs with mushrooms can be an appetizer on their own, however they may seem a bit dry without any sauce. We recommend to serve them with some homemade marinara or gravy, or even cranberry jam! These meatless meatballs taste best in tandem with whole wheat pasta dishes, mashed sweet potatoes, or even on a bed of salad greens. Here’s how you make these amazing meatless meatballs!

Rich Organic Marinara Sauce
RecipeRich Organic Marinara Sauce

This rich organic marinara sauce recipe is the best! It offers lively tomato and herbal flavor, and it is very easy to make. The success of this recipe is hidden in the well-binded combination of organic vegetables (good canned tomatoes, tomato paste, onion, garlic), flavourful herbs (basil, parsley, oregano), hearty spices (chili flakes and paprika) and healthy extra virgin olive oil. We recommend using canned whole peeled tomatoes, but diced work as well. Organic marinara sauce is a fool-proof recipe. As long as you use good quality organic tomatoes and fresh herbs, the rest kind of happens naturally. Unlike most sauces that you can buy in the supermarkets, this marinara sauce is free of added sugar. The secret to the desired subtle sweetness in the sauce is onion. So don’t exclude this healthy ingredient if you aim to avoid sugar in your diet. However, you can add sugar to this recipe if you are not fussy about sugar and would like your marinara a bit sweeter. This organic marinara sauce is perfect for any Italian dish, simple pasta dishes, or vegetarian bean dishes, such as Black Bean Meatballs with Mushrooms. It also makes an incredible pizza sauce. Recipe yields 4 cups sauce (enough for 8 servings), and it can be doubled if desired, because it stores so well!

Mushroom Ragout with Cauliflower Polenta
RecipeMushroom Ragout with Cauliflower Polenta

Mushroom ragout is a healthy and hearty dish that is ideal for a busy weekday night. It is light, completely vegetarian, and full of flavors! We used brown mushrooms in this mushroom ragout recipe, but you are welcome to substitute them with any kind of mushrooms available, a mixture of different kinds can be even more interesting! Feel free to experiment! Mushrooms tend to absorb a lot of flavor while they cook, so by adding sun-dried tomatoes, spring onions and spices while cooking them you will add more taste to the final dish. You can try to experiment and add other kinds of vegetables to this mushroom ragout, but since this recipe already calls for a decent amount of cauliflower, we decided to keep accent on the mushroomy taste and not overwhelm the dish with other flavors. A good way to enjoy mushroom ragout is on top of a bowl of polenta (an Italian dish made from ground cornmeal). lightened up by cauliflower rice, which makes this dish even healthier and richer in nutrients! You can cook polenta using plain water, but suggest using chicken or vegetable broth instead (depending on your vegetarian preferences) as it will infuse the dish with lots of flavor. For this recipe, we added riced cauliflower to polenta and the broth to cook all ingredients together. The cauliflower flavors don’t overwhelm the polenta, but rather add more pleasant texture and vibe. The turmeric adds the yellow color and it’s inflammation friendly, so we definitely recommend keeping it part of the recipe. The melted butter and cheese add richness and help make the dish taste delicious. Don’t forget to finish the cauliflower polenta with some Parmesan cheese, it makes the dish creamier and adds a nice salty bite.
