Hawaiian Pork (in a Slow Cooker)

This sweet, smoky, salty and tangy hawaiian pork is out of this world delicious! The extraordinary combination or pork, vegetables and pineapple flavors make this dish taste anything but usual!

The best thing about this hawaiian pork that it is packed with healthy nutrients! Onion, red pepper, celery and pineapple compliment the taste of the pork and give you your daily dose of vegetables.

The second best thing about this dish is the sauce. It’s a combination of pineapple juice, garlic, ginger, soy sauce, brown sugar, lemon juice, oregano, salt and pepper. Want to make it even healthier? Replace the brown sugar with honey.

Cooking this dish in a slow cooker makes the pork especially tender, every piece gets soaked in sweet and tangy sauce, that simply melts in your mouth!

This hawaiian recipe calls for canned pineapple. However, we recommend you to try using a fresh pineapple if available in your area. It will make the dish taste even more exotic and flavorful!

Serve this dish fresh over soft buttered rice or other grain of your choice. The leftovers can be stored in the fridge for up to 3 days.

Ingredients:

Boneless pork stew meat 2pounds

Pineapple chunks in pineapple juice 1can

Red pepper 1pcs

Onion 1pcs

Celery ribs 2pcs

Garlic cloves 3pcs

Olive oil 2tbsp

Soy sauce 2tbsp

Brown sugar 2tbsp

Ginger 1tbsp

Lemon juice 2tbsp

Oregano 1tsp

Salt 1tsp

Black pepper 1/2tsp

Water 1/4cup

Cornstarch 1tbsp

Directions:

1. Heat 1 tbsp olive oil in a skillet over medium-high heat. Lightly brown pork pieces until no longer pink. Remove from the skillet and place in the bottom of the slow cooker.

2. In the same skillet add another tablespoon oil, and fry chopped onion for 3-5 minutes, then add chopped red pepper and celery and cook, stirring constantly, until they are vibrant in color and just tender, but not browned. Transfer to the slow cooker on top of the pork.

3. Mix soy sauce, lemon juice, brown sugar, grated ginger, crushed garlic, dry oregano, salt and pepper in a small bowl until well combined.

4. Drain the pineapple chunks. If using fresh pineapple instead, cut it into small cubes (about 1 ½ cup in total). Place over the pork and veggies in the slow cooker. Pour the sauce over the stew. Turn the slow cooker on high for 3 hours. To thicken the sauce mix 1 tablespoon of cornstarch with ¼ cup of water and add to the stew during last 30 minutes of cooking and mix well.

5. Serve this Hawaiian pork over rice. Garnish with fresh chopped parsley, if desired.
