Spinach and Feta Stuffed Chicken Breasts

Need something a little extra special for dinner tonight? Something that is foolproof to make and that tastes delicious? These Stuffed Chicken Breasts make a the perfect dish and use rather simple and affordable ingredients. All you need to do is butterfly a chicken breast, flatten it, then stuff it with feta cheese and cooked spinach, forming a roll. Then you pour creamy tangy sauce over the chicken, put it into the oven, and 45 to 50 minutes later something wonderful comes out. And the leftover sauce in the pan is perfect for spooning over rice or steamed vegetables.

Ingredients:

Chicken breasts 10pcs

Spinach 7ounce

Feta cheese 1 1/2cups

Clove garlic 1pcs

Olive oil 1tbsp

Mayonnaise 1tbsp

Dijon mustard 1/2tsp

Lemon juice 1tbsp

Cream 1/4cup

Peper mix 1/2tsp

Salt -to taste

Fresh parsley 1tbsp

Directions:

1. Add 1 tablespoon olive oil to pan. Add finely chopped garlic and spinach; cook for 8 minutes, stirring frequently until done. Remove pan from heat; stir in feta cheese and mix well. Cool for 10 minutes

2. Preheat your oven to 400°F. Prepare chicken for stuffing. You can either, slice 2 thick chicken breasts in half and make 4, or beat 4 chicken breast until thin and wide.

3. Spoon about 1 rounded tablespoon of spinach mixture onto each chicken breast. Wrap chicken around mixture making a roll, secure with a toothpick if necessary. Sprinkle chicken with salt and pepper mix.

4. Lightly grease a medium baking dish (large enough to fit ten rolled chicken breasts). Place chicken breast rolls inside the dish. Mix mayonnaise, dijon mustard, lemon juice and cream and pour over stuffed chicken.

5. Bake in the oven for 45-50 minutes (longer for very large breasts) and serve topped with fresh parsley.
